Bacon-Maple Cookies


Bacon? In a cookie? Yes. It may be the Christmas miracle you’ve been wishing for. These cookies are the perfect gift for the bacon lover in your life.


Bacon-Maple Slice n’ Bake Cookies

6 oz. bacon, finely chopped

4 cups all-purpose flour

1 1/2 teaspoon baking soda

1 1/2 teaspoon baking powder

1 teaspoon kosher salt

1 cup (2 sticks) unsalted butter, melted

1 1/2 cups packed light-brown sugar

1 cup granulated sugar

2 large eggs

1 teaspoon maple extract

1 cup pecans, chopped

Place to bacon into a cold pan. Turn the heat to medium heat and cook the bacon, stirring occasionally, until crisp. Once cooked remove to a bowl (with it’s fat) to cool.

In a large bowl whisk together the flour, baking soda, baking powder and kosher salt.

Place the melted butter and bacon, with the bacon fat, into the bowl of a stand mixer. Add brown sugar and sugar and mix. Once combine. Once combined, add the eggs one at a time. Next, add the maple extract. Using a large kitchen spoon or ¼ cup measure and slowly add the dry mixture to the mixer. Once combined, add the chopped pecans. Mix. Divide the dough in half and then turn each dough half onto a large sheet of parchment paper and roll it up into a 12-inch long tube. Place the dough into the fridge to chill (or into the freezer if you want to bake them a few days later.)

When you’re ready to bake, preheat the oven to 350. Slice the cookie dough into ½ inch thick slices and place them onto a parchment lined sheet tray. Bake for 12 minutes or until they start to become brown around the edges.
