Basic Cakey Brownies
6 tablespoon butter
4 ounces dark chocolate chips or chopped dark chocolate
¾ cup sugar
1 cup flour
¼ cup dark cocoa powder
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon baking soda
Nonstick cooking spray
Preheat an oven to 350. Line a 8x8 glass dish with parchment paper. Set aside.
Fill a medium saucepan ½ of the way up with water. Place a medium sized heatproof glass bowl over top of the sauce pot to make a double boiler. Place on the stove top over a medium heat. Add the butter, chocolate chips and sugar to the glass bowl and melt, stirring occasionally, until smooth. Remove from heat and let cool.
While the chocolate is melting, whisk together the flour, cocoa powder, baking powder, baking soda and salt. Set aside.
Once the chocolate mixture is cool to the touch, but still a bit warm, add in the eggs and beat vigorously until mixture comes together and starts to pull away from the sides of the pan. Then, add in all of the dry ingredients and, using a rubber spatula, fold the wet and dry mixtures together. Once smooth, pour into the prepared baking dish.
Bake for 25 minutes. Remove from the oven and let cool completely before removing the brownies from the pan. Cut the brownies into 16 1-inch squares.
